So I know many of you are on pinterest and it's growing like crazy. When I first started I was like "what the heck is this", and now I am totally addicted!!!
It's so fun to see new things that I never would have seen before. I have already been "pinspired" and have been creative this weekend with my headbands that will be going into the shop (hopefully the end of the month) along with some other fun stuff. Starting your own business takes a lot of time, energy, money and patience. But I am almost there!
So today I wanted to share the yummy desserts I found on pinterest because one they look amazing and two they look delish!
enjoy :)
Since it is still really hot and watermelon is still in season I thought I would share a refreshing treat that will cool ya down.
Minted Watermelon Popsicles
recipe from Food&Wine.com |
1 1/2 pounds seedless watermelon without the rind, cut into 1-inch dice (about 4 cups)
2 tablespoons sugar
1/4 cup mint leaves, minced
2 teaspoons finely grated lemon zest
Pinch of salt
In a blender, puree the watermelon with the sugar until smooth. Stir in the mint, lemon zest and salt. Pour the puree into 8 popsicle molds or 2 standard ice cube trays (insert popsicle sticks halfway through freezing) and freeze until hard, about 3 hours.
Enjoy your Monday :)
